 I am Pappy Tapp. I live in Winchester, Kentucky. In June 13, 2009 Winchester held The First Annual Beer Cheese Festival http://www.winchesterfirst.com. Clark County [Winchester] is the Home of Beer Cheese...You can google Beer Cheese. I have a recipe that deviates from the original but is quite delicious!  To make Pappy Tapp's Kentucky Beer Cheese: 3 Dragons "Thermal Violation!" you will need the following INGREDIENTS: Food Processor, Blender, 16 ounces of Ultra Sharp Vermont Cheddar Cheese,  3 ounces of Velveeta Cheese "optional for more smooth," 1 Beer,  3 tsp Garlic Powder,  3 tsp of Cayenne Pepper, 3 tsp of Onion Powder, 3 Jalapeno Peppers,  3 tsp Dat'l Do-It Devil Drops "Hot Drops"! DIRECTIONS: Using the Blender add 1/4 Beer,  3 tsp Garlic Powder, 3 tsp of Onion Powder, and Liquefy for 3 minutes. Then Using the Food Processor Grate 3 ounces of Velveeta Cheese "optional for more smooth", 16 ounces of Ultra Sharp Vermont Cheddar Cheese. Replace the Grater Blade with the Processor Blade. Then add the contents of the Blender into the Food Processor and Process. Use another 1/4 Beer to rinse the remaining contents from the Blender and add it to the Food Processor. Let the Processor Run for 3 minutes. While that is going add 1/4 Beer to Blender and add 3 tsp of Cayenne Pepper, 3 Jalapeno Peppers, 3 tsp Dat'l Do-It Devil Drops "Hot Drops" and  Liquefy for 3 minutes.Then add the contents of the Blender to the Food Processor and Process. Using the last 1/4 Beer pour it into the Blender to rinse it and add contents to the Food Processor. Add 1/4 tsp Salt and Let Processor run for about 3 minutes. "At Last" It is Done! Spoon Pappy Tapp's 3 Dragons "Thermal Violation!" Beer Cheese into Mason Jars, Put the Lids on and put it in the Refrigerator for 3 Days. Pappy Tapp's Kentucky Beer Cheese needs this Time to Ripen and Thicken. This Makes 2 Mason Jars Full to the Top. Enjoy! For Thicker: add 3 oz less Beer. For more Traditional Kentucky Beer Cheese: Use 1 tsp less cayenne pepper, 1 tsp less garlic powder, 1 1/2 tsp less onion powder, 2 tsp less Dat'l Do-It Devil Drops "Hot Drops" and remove 3 Jalapeno Peppers. SERVE: As an Appetizer, With any or all of the following; Crackers, Pretzels, Celery, Sliced Radishes, Cauliflower, Broccoli, Carrot Slices, Cucumber Slices, Yellow Squash Slices, or any favorite Raw Vegetables.
